Lunchbox for teen girls 08/31/2012

I was surprised, but BOTH of the girls liked yesterday's lunch...even the green egg salad wrap.  Their favorite was the "fruit salad" and want that everyday.  Sorry kids...I do not have any pudding or cool whip until I go shopping.  You will have to wait :)  Today's lunch is a mixture of leftovers of lunch and dinner stuff.  Each of the girls have a little different lunches.  Eryn baked the chocolate chip banana bread using whole wheat flour and splenda brown sugar...best banana bread.

Lunchbox notes

I have two beautiful daughters who think they are nothing alike but are so similar it's not funny.  One is 13 and only believes what her sister says.  Doesn't even take my opinion into consideration any longer.  It used to be "shut up Eryn...I'm asking mama."  Now it's "mom...I'm asking Eryn...gosh".  I'm kind of sad about that...she is growing up and away from me.  Eryn is a senior this year.  I'm not sure what to do about that.  Lots of emotions going on around here. 
Even though they are just about grown I have begun to put jokes and notes in their lunch boxes.  I missed one day and they both came home asking where their note was.  Thank goodness they aren't too grown to enjoy the little things.

Recipe review Honey Balsalmic Pork roast (recipe found on Pinterest and Kraftrecipes.com)

Last night was a busy night...work, Church, making lunches, and of course the Texas Ranger game.  I was so very glad dinner was in the crockpot.  We had Honey Balsalmic Pork roast with carrots and mashed potatoes.  I was a little skeptical about balsalmic vinegar and honey barbecue, but let me just say, the roast is completely gone.  The dogs got the bones this morning.  The balsalmic vinegar and honey barbeque gave it such a great (AWESOME) sweet and sour taste.  The carrots were my favorite.  The au jus was great over the mashed potatoes.  You must try this if you love pork roast.  I used a shoulder picnic.

Makes: 4 servings Total Time: 6 hr

what you need
  • 1 pork roast
  • 1 cup Kraft Honey BBQ Sauce
  • 1/2 cup balsamic vinegar
  • 1 package baby carrots
  • Optional: new potatoes or onions or mushrooms
make it
Place pork roast into slow cooker- make sure to cut any strings.

Pour BBQ sauce and balsamic vinegar into crock-pot, followed by the carrots and any other vegetable you might want to add.

Let cook on high 6 hours or low 8 hours.
Notes
I typically serve with mashed potatoes.

LUNCHBOX FOR TEEN GIRLS 08/30/2012

Yesterday's lunch was a hit.  Both girls liked the simplicity of the "lunchables" and was glad there was still no boring sandwich in their lunchbox.  Today, trying out a wrap on them in which the color may determine whether they like it or not....green....not only green but green egg salad.  So, here goes...today's lunch:

Egg salad wrap (egg salad made with avacado, a little low fat mayo, a little mustard, pickle, and sweet relish)

fresh fruit salad (sugar free cool whip, sugar free pudding, vanilla greek yogurt 8oz - whip those together and then I added blueberries, grapes, bananas, apple - really, you could also use canned fruit...any kind you like...this is just what I had on hand)

lunchbox 08/29/2012 for teen girls

Yesterday's lunch was mostly a bust.  The ASD child did not like the sweeter main course of honey peanut butter and apples.  Just not routine enough for her.  The older daughter liked it but said it would be better with baked apples...so I may try that with her for breakfast or something.  Today's lunch was a bit more simpler:

homemade "lunchables" - turkey or ham (depending on which girl I'm packing for), monterey jack cheese, whole wheat ritz

WEEKEND BEFORE SCHOOL FUN MESS

What a weekend before another year of school. First of all I now have a senior and am not really sure, yet, how I feel about that. We went to Schliterbahn Friday as a last hoorah before school starts. What a great idea, right? Maybe not so much. The very first slide we went on I hit bottom somehow and I do believe I broke my tailbone. Walking, standing, sitting, lying, bending, really anything is a chore to do...ouch. Eryn got a tremendous sunburn on her face and looked like she needed to be in the burn unit...her face is so swollen and peeling still today. So the poor thing had to go to her first day of school, as top dog in high school, looking like she was beaten. I will rethink the whole fun, family day next year.

Lunch box for teens 08/28

Today is going to be an experimental lunch for my teen girls.  They are used to savory instead of sweet as their main course.  Today is more on the sweeter side:

Peanutty apple wraps - peanut butter honey and cinnamon mixed together then spread on whole wheat tortilla.  sliced apples placed on peanut butter mixture and rolled like a burrito.

1st day of school lunch box

1st day
buffalo chicken bites - recipe found on pinterest.  Family LOVES them and great low fat Low carb choice.  Used whole wheat flour to roll them in instead of all purpose flour.
